Vegan Chick-Un & Dumplins

As you may already know, I have an infatuation with veg-i-fying southern foods that I grew up eating. When I was little, we’d always go on road trips with pit-stops at Cracker Barrel to down some chicken and dumplins that were almost (but not quite) as good as my grandma’s recipe.
I didn’t even attempt to recreate this dish until about a year ago, and I have no idea why I waited so long! It is just as good as the original, only much better for you.
Be warned, I am big on food presentation, but there are just some things you can’t may “pretty”. Don’t be fooled by the unattractive appearance, I’m pretty sure you’ll love it!
What You Need:
There are a couple of different ways to make this dish. I typically opt for a thicker version, but my husband requested a thinner version for this batch.
For a thicker dish, you need:
• 1 carton of Pacific Natural Vegetable Broth
• 5 cups of biscuit mix or all purpose flour (or one bag of Bob’s Red Mill Biscuit Mix)
• 1 pack of Morning Star frozen Chik’n Strips
• 3/4 cup of water
• Salt & Pepper to taste
For a thinner dish:
• 2 cartons of Pacific Natural Vegetable Broth
• 5 cups of biscuit mix or all purpose flour (or one bag of Bob’s Red Mill Biscuit Mix)
• 1 pack of Morning Star frozen Chik’n Strips
• 3/4 cup of extra flour of your choice
• 3/4 cup of water
• Salt & Pepper to taste
**Side note: I’ve found that the gluten-free flour can make for a more dense dumplin. All purpose or even bisquick will make for a fluffier dumplin!
Step 1: Make the Dough
1. Combine the 5 cups of flour with 3/4 cups of water.
2. Mix with a fork (and/or your hands) into a ball.
Step 2: Roll the Dough
1. Put the ball of dough onto a large sheet of wax paper.
2. Place another sheet of wax paper on top of the dough and smush down.
3. With a rolling pin, flatten the dough out into approximately a 1/4’’ sheet.
4. Place the flattened dough into the freezer
Step 3: Cut & Boil
1. While the dough is in the freezer, bring the vegetable broth to a slight boil then reduce to medium-high heat.
2. If opting for the thinner version of the dish, add the 3/4 cup of excess flour to the broth and mix well.
3. Break the chik’n strips into smaller pieces and drop into the broth.
4. Bring the dough out of the freezer and with a pizza cutter, slice into approximately 1’’ squares.
Step 4: Drop the Dough
1. Peel the dough squares from the wax paper and drop them into the broth.
2. Stir occasionally and be sure not to overcook as the dumplins will get too chewy.
3. Add salt & pepper to taste.
4. Enjoy with family and friends!
